UL-Listed for ventless cooking, the Alto-Shaam Converge Multi-Cook CMC-H3H Oven does not require a hood for cooking, even when preparing proteins. It features a ventless catalytic converter allowing it to operate anywhere in a commercial kitchen outside a hood.
With nothing else like it in the market, powerful and compact, the Alto-Shaam CMC-H3H Converge is a Multi-Cook and Combi Oven all in one. It has the capacity for one full-size hotel pan in each cooking chamber, a see-through double-pane insulated glass door for heat retention, and touchscreen controls that can save and store pre-set recipe menus via a USB port.
It features three independent cooking chambers with absolutely no flavor transfer between the chambers. Cook different product types simultaneously, such as meats and fish or baked goods and fish. It’s possible because of Alto-Shaam’s Structured Air Technology. This innovative design turns each cooking chamber into an independent oven with separate temperatures, fan speeds, humidity levels, and cook time control. Cook using Structured Air Technology heat, controlled humidity, or a combination of both. It replaces speed ovens, grills, steamers, conveyor ovens, charbroilers, salamanders, and much more, producing better and more consistent quality food within an ultra-compact space. Use it to air fry, bake, grill, or steam at the same time up to two times faster than conventional convection ovens.
The Alto-Shaam CMC-H3H Converge Oven is self-cleaning. No need to remove the internal oven racks or cooking chamber jet plates. Easily program the oven to clean with its five built-in cleaning modes, set it, and forget it; at the end, the oven is sparking clean and ready for its next cooking cycle.
