Classic controls include a simple on/off rocker-style power switch, a rotary cook temperature control knob, a rotary hold temperature control knob, and a digital display with up/down arrow keypads for setting cook and hold times.

Capacity for the 1000-TH-II Cook & Hold Oven is four full-size hotel steam table pans. It has a stainless steel exterior cabinet with a right-side hinged solid door that has an antimicrobial magnetic handle and includes four 3-1/2” commercial caster wheels with locking brakes

Alto-Shaam’s Halo Heat® technology makes the 1000-TH-II Cook & Hold Oven better than conventional cooking methods because it uses a low temperature and slow cooking methodology with gentle radiant heat that evenly surrounds food. Because Halo Heat® doesn’t use harsh heating elements, fans, or added humidity, it produces better food quality and doesn’t dry out or change the flavor of the food. When cooking meats Halo Heat® activates natural enzymes in meat, producing a moister and a more tender product. And it is a great solution for baked goods or other delicate food items.

UL-Listed for ventless cooking, the Alto-Shaam 1000-TH-II Cook & Hold Oven does not require a hood for cooking, even when preparing proteins. Use it anywhere in a commercial kitchen outside a hood.
