About 20 percent harder than a knife blade, the abrasive surface of a honing steel vs a sharpening steel is enough to straighten the tiny misalignments in the knife’s edge caused by daily use. (A sharpening steel actually grinds away some of the metal.) With the legendary high-carbon stainless steel in a Victorinox blade, honing is usually all you’ll need to keep your knives sharp. This honing steel is for regular, not serrated, blades, and has a plastic handle with a convenient ring for hanging it on a scabbard belt or pot hook to keep it handy.
